Bokasso Cooperative has two adjacent washing stations (refineries). The coffee will be listed in the market as "Bokasso" through Sidama Cooperative Union. Sidama is famous for the production of washed coffee with clean, floral, citrusy flavors. In the area of ​​Sidama, a variety of different coffee growing environments are widely spread, including Aleto, Wondo, Darra, Dale, etc. famous for the production of forest coffee growing in the middle of the high altitude mountain. There are about 50 co-operatives currently in Sidama and approximately 90,000 producer members belong to the total. Most of the coffee varieties cultivated are called Sidama type and are produced by organic cultivation.

All Ethiopian coffees are exported through the central organization Union, which is shipped here via Sidama Union. In the Union, dry milling and grading are also performed before packing work.

Most of the coffee cultivated in Ethiopia is considered to be organic because during the cultivation process, farmers use natural fertilizers mixed with coffee pulp (fruit) etc.
However, most producers do not get certification, and Ethiopian coffees that Fuglen Tokyo have purchased has never been mentioned as organic. Ideally, it is to order to produce coffee in a sustainable fashion while minimising the impact on the ecosystem of the land and produce it without destroying the environment. In addition, we purchase only from producers who are considerate of the health aspects of people involved in cultivation. In order to let you know more about how Fuglen Tokyo are choosing coffee, we also chose a coffee who has dared to take organic certification this time.

Our weekly order cycle closes every Monday 11.59pm (GMT +8). On Tuesdays, our roaster and brand partners will prepare your order. For coffee, it will be either roast to order or from their latest roast batch.

Fuglen Coffee
Fuglen has been running since 1963 as KAFFE FUGLEN and has since evolved in a unique way with the times, landing with COFFEE/COCKTAIL/VINTAGE DESIGN as its main concept today.

It was back in 2012 when Fuglen opened its first foreign branch in Shibuya, Tokyo under the name FUGLEN TOKYO. Recreating a concept equivalent to its flagship location, FUGLEN TOKYO now serves as a place where people can revel in the taste of Oslo through their selection of coffee and cocktails.

In 2014, 2 years following its opening, Fuglen established a roaster for improved quality and originality.

Following the concept “expressing the characteristics of the beans” Fuglen pursues originality in its flavor by taking on the whole process of selecting, roasting, and brewing the coffee beans.

Introducing the Nordic Style Light Roast to Japan as well as other Asian countries is another important factor that Fuglen holds dear to heart; to note, the Nordic style expresses fruitiness, a blooming sweetness and a clean aftertaste of the actual bean through roasting.

The lingering taste is often described to be as fresh and citrusy as an orange, sweet and has a bright acidity as a blueberry, and mildly sweet as a chocolate.
